Chickpea and Rose Cookies with Nuts

Chickpea cookies?! Unconventional, I know. Who says it is not possible to make delicate cookies with Legumes!

The almond ones are my favourite. These cookies are much loved by my friend, Carla, and I am sure she will be more than happy to share her tastemonial, if asked to. These cookies along with a tall glass of cold milk make an excellent breakfast. Vanilla and rose in this recipe is crucial. It helps to mask the nutty flavour of the chickpea flour and honestly, make these cookies extra special <3

Delicately but boldly flavoured with rose and butter, coated in honey and embellished with nuts — this is a deliciously unique cookie recipe with endless flavour. Dunk one of these special cookies in a cup of hot milk tea or black coffee for a richer experience!

Chickpea and Rose Butter Cookies with Nuts

  • 1.5 sticks Butter
  • 3/4 cups Sugar
  • 1/2 cup Chickpea Flour (sifted)
  • 1.5 cups All Purpose (sifted)
  • 1 Egg (beaten)
  • 1 heaped teaspoon Rose Petals (powdered)
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Baking Soda
  • 2 tablespoons Honey
  • 1 teaspoon Water
  • 1 cup Nuts (Pistachio, Almond) or Sesame Seeds


Start by whipping the butter and sugar together until creamy.
Crack open the egg and beat it into the butter and sugar mixture.
Mix in the salt, baking soda, both the flours, vanilla and powdered rose.
Mix well until you get a cookie dough consistency. Store in the fridge for 1 hour to firm up and to make handling it easy.
Roll out the dough after an hour of refrigeration and cut into about 2.5 inch (or really any size you want) cookies .
Bake in the oven for 12-15 minutes at 350 degree Celcius. Take them out when they are crunchy with slightly brown edges. Let them cool down for 15 minutes.
Mix the honey and water together and paint each cookie with it and immediately dip them in sesame seeds or crushed nuts of your choice.
