Nothing can beat fried chicken and beer for any kind of game-watching party night. What if you got the best of both worlds in one bite? I know that will be a dream come true for many out there. Try this super simple yet addictive fried chicken recipe to make your party stand out.
There are just three flavour contributors in this recipe — Miso, beer and garlic. Simple, right?
Miso is a thick salty paste made from fermented soy beans, mainly. It can sometimes contain barley and rice too. Depending on the type/combination of grains and length of fermentation the colour (white, yellow, red) and taste of the final product changes. Miso will bring a rich and unique burst of umami flavour to your dishes. Native to Japan, this paste is a source of gut-friendly bacteria and hence should not be used for high-temperature cooking. In this recipe, I have used Shiro Miso (White Miso) solely for the purpose of flavour. While buying your Miso, take a minute and go through the ingredients. It should not contain anything more than just water, soy beans, and/or rice and barley, salt, yeast and Koji culture. The last ingredient is what suggests the product is probiotic and that is what you want.
I made a super quick dip to go with these irresistible chicken bites by combining mayo, sriracha and lime juice. If you like the combination of citrus and heat like me then use more sriracha and lime juice. If a mild creamy dip with just a bit of a kick is what you are after then just up the amount of mayo. There is no fixed recipe for this and you can play around with the ingredients based on your palette. Tip: If your chicken is lacking salt you can always make up for it by adding some salt to your dip.

Crispy Miso and Beer Fried Chicken Bites

- 400g Chicken (boneless and cut into bite-sized pieces)
- 1/2 cup Beer
- 4 teaspoons White Miso
- 3 cloves Garlic (minced)
- 1.5 teaspoons Sea Salt
- 1/2 cup Corn Starch
- Oil (for frying)
|Marinate the chicken (1.5 inch pieces) in beer, 2 tsp Miso, garlic and salt for at least 2 hours if not overnight in a refrigerator. Make sure you bring the chicken to room temperature before frying.|
|Next, add the rest of the Miso paste and corn flour to the marinated chicken and mix well.|
|These will be double fried for extra crisp. First, fry in oil for 4-6 minutes on medium-high heat. Then, rest for a minute and fry for a second time using the same oil for about 3 minutes or until beautifully brown. Depending on the size and temperature of the chicken, cooking times can vary.|
