This Asian flavour-infused light and yet comforting recipe will truly warm your soul. The meaty mussels render a very rich but delicate taste to the broth. Throw in some black beans and you have yourself a very gratifying healthy dinner. I made some fresh vermicelli to go with it just because I was craving some carbs but it is a pretty fulfilling dish on its own.

The broth is just bursting with flavour from ginger root, garlic, onions and scarlet red chillies. This broth will make a great base for soups and hot pot. What’s more? It is super cheap and super quick to make at home. You cannot go wrong with this one-pot meal and it is so elegant and delicious that your family and friends will praise you lavishly for days after!

Mussels and Black Beans in Asian-Style Broth

  • 2lb Mussels (Cleaned)
  • 1 cup Black Beans (Canned and Drained)
  • 1/2 Medium Onion (Thinly Sliced)
  • 4 stalks Green Onions (Chopped)
  • 4 tablespoons Ginger (Cut into Julienne)
  • 8 cloves Garlic (Large) (Thinly Sliced)
  • 2 Thai Red Chillies (Thinly Sliced)
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Sesame Oil
  • 2 tablespoons Rice Vinegar
  • Salt (Optional)


Fry the onions (except green onions), chillies, garlic and ginger in sesame oil for a couple of minutes on high.
To this, add soy sauce and vinegar and stir just until they start to bubble,
Tip over the mussels and beans and cover and cook for 10 minutes.
Season to taste and strew chopped green onions on top.
